On Cammeraigal Country, savour a three-course menu crafted by Indigenous Ambassador Dwayne Bannon-Harrison, where every dish tells a story. Paired with sustainable wines from First Nations suppliers, this is more than a meal—it’s a journey through land, heritage, and flavour.

With the tranquil setting of the Wildlife Retreat’s  exclusive dining space, Me-Gal,  the Spirit Food Journey invites you to experience the depth of Indigenous food traditions, sustainability, and storytelling.

Meet Your Hosts

Dwayne Bannon Harrison

Dwayne Bannon-Harrison is a distinguished Yuin man from New South Wales and the Indigenous Ambassador for Trippas White Group. With over 17 years of experience, Dwayne offers immersive culinary experiences that celebrate First Nations heritage, connecting diners to Australia’s rich cultural roots. As the founder of Ngaran Ngaran.

​​​​​​​Culture Awareness and co-founder of Mirritya Mundya, he infuses traditional Indigenous flavors into contemporary cuisine. Dwayne is also the Chair of the NSW Aboriginal Tourism Operators Council, working to amplify Aboriginal voices in tourism. His work fosters understanding and respect for Indigenous culture through education, food, and storytelling.

Bill Simpson

Bill Simpson is a Proud Wakka Wakka Man from South East Queensland. He has 25 years of Hospitality experience as a Chef at some of Sydney's premier locations and has worked as a part of the Woolworths National Indigenous Employment Program as a Mentor and Facilitator across Australia. Bill has a strong passion for working with, and supporting individuals and Community groups to help secure ongoing employment and foster a culture of change at the grassroots level. He has been an Indigenous Mentor for TAFE NSW and worked at the Salvation Army as the Indigenous Employment Officer for Greater Western Sydney.  

In his current role as Taronga’s Indigenous Education Officer Bill continues to mentor young people involved in a range of Cultural and Community Programs, support other Indigenous staff working across both of Taronga’s sites and is an active member of Taronga’s Aboriginal Advisory Group, Cammeraigal Country.
